Caramel Popcorn Party Snacks

I love eating caramel popcorn! It's one of my favorite snack munchies, which I think is a better alternative than chips. Because of my successful attempt last Saturday of making Rainbow Candy Popcorn for the kids, I decided to explore and try out some recipes online of my own favorite that I can simply make in minutes to satisfy spur-of-the-moment cravings.

So, far this recipe is the best one for me, which is not too sweet and sticky to the teeth. I served them to the kids in these cute little baking cups that are perfect for kiddie parties as well.
INGREDIENTS:
8 cups popped popcorn
1 cup of peanuts
1/4 cup butter
1/2 cup brown sugar
3 tablespoons light corn syrup
1 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon baking soda
1. Mix popcorn and peanuts on a tray or bowl.

2. In a medium saucepan over low heat, melt the butter and stir in the brown sugar, corn syrup and salt. Bring to a bowl stirring constantly for about 3 minutes. Remove from heat and stir in baking soda and vanilla.

3. Pour the syrup immediately over the popcorn. Stir and toss to coat.

4. Place the popcorn in a baking pan or dish and bake in preheated oven (300 degrees F) for 10 minutes (Stir after 5 minutes and bake again for 5 more minutes). Remove the pan and let it cool before breaking into small pieces.
